For all you last minute Santas out there
A really simple and quick recipe for one of the most Christmassy biscuits there is (especially if you have adorable cookie cutters).
Even though I have always been the ultimate Xmas craze person, this year I’m running late with everything, from baking to decorating. I think the reason is pretty self-explanatory, but then again, I would never forgive myself if Christmas went by and I didn’t bake something that makes the apartment smell of cinnamon and vanilla.
If you’re as late as I am, but still want to make something with a dash of Christmas cheer, here’s the recipe so let’s get baking.
-300 grams of flour
-5 tablespoons of sugar (brown sugar is a great option if you have some)
-1 packet of vanilla sugar (8 grams)
-½ packet of baking powder (6 grams)
-2 teaspoons of ground cinnamon
-1 tablespoon of powdered chocolate (cocoa works just as well)
-1 tablespoon of Christmas spice mix
-a pinch of salt
-100 grams of butter
-3 tablespoons of honey
-a dash of grated orange zest
In a bowl you mix the dry ingredients first and then add the wet ones one by one. Combine until you get a unified batter.
*To make the process easier, you can melt the butter with the honey in the microwave for a bit
*If the batter seems a bit too dry (if the egg was on the smaller side for instance), feel free to add a bit of extra butter
Roll out your batter onto a floured surface and use your cookie cutters to cut out shapes (we bought ours really cheap at Pepco and Kik), put them on a cooking tray and pop them in the oven for about 15 minutes at 180 degrees Celsius.
Yep that’s it. Literally, done. Enjoy, you just made delicious and adorable Christmas biscuits with minimum effort. Give yourself a pat on the back, pour a glass of milk, play a Christmas movie and enjoy.
